Pav Bhaji Recipe.
Pav bhaji is a popular street food from Mumbai India.
It consists of a spicy vegetable curry called "bhaji" served with soft buttered bread rolls called "pav." Here's how to make it.
Ingredients..........
3 medium potatoes, boiled and mashed
1 cup chopped mixed vegetables (carrots cauliflower green peas)
2 tbsp oil
1 tbsp butter
1 large onion chopped
1 tsp ginger garlic paste
2 large tomatoes chopped
2 tsp pav bhaji masala
1 tsp red chilli powder
Salt to taste
1 tbsp lemon juice
8 pav buns
Butter for toasting the buns
Chopped coriander leaves for garnish
Instructions:
Boil the potatoes until soft, then mash them with a fork or potato masher.
Keep aside.
Heat the oil and butter in a large pan on medium heat.
Add the chopped onion and ginger garlic paste and saute until the onion turns translucent.
Add the chopped tomatoes and mix well.
Cook until the tomatoes are soft and mushy.
Add the chopped mixed vegetables to the pan and stir well.
Cook for a few minutes until the vegetables are slightly soft.
Add the pav bhaji masala red chilli powder and salt to taste.
Mix well and cook for another minute.
Add the mashed potatoes to the pan and mix well.
Mash the vegetables and potatoes together until everything is well combined.
Add a cup of water to the pan and stir well.
Cover the pan and let it simmer on low heat for 10-15 minutes stirring occasionally.
Once the vegetables are cooked and the gravy is thick add lemon juice and mix well.
Turn off the heat.
While the bhaji is simmering, slice the pav buns in half horizontally and spread butter on both sides.
Heat a griddle or tawa on medium heat and place the buttered pav buns on it.
Toast them until they are golden brown on both sides.
Serve the hot bhaji in a bowl garnished with chopped coriander leaves and a dollop of butter.
Serve the toasted pav buns on the side.

Note..........
You can adjust the spice levels to your liking by adding more or less red chilli powder and pav bhaji masala. You can also add more vegetables like bell peppers or mushrooms to the bhaji.
